| Merlot Syrah is a great blend that produces a rich, yet smooth wine. Domaine Salvat went further, and produced the Merlot Syrah Grenache 2007 with their grapes from Vins De Pays Cotes de Catalanes. Composed of 50% Merlot, 40% Syrah and 10% Grenache, this wine undergoes a production process suited to each of these varieties. The Carbonic maceration is very short on the Merlot and Syrah. Maceration on the traditional Grenache Noir is followed by fermentation at controlled temperatures. The wine is the placed in enameled vats for one year before bottling. This Merlot Syrah Grenache wine is fresh, smooth and round, and can accompany many dishes, light grilled food, or is good by itself. It is served between 15 and 18 degrees Centigrade. Drink now through 2011.
Known as the the sunniest vineyard in France, Domaine Salvat is highly respected in this area. Jean-Philippe Salvat is well known for his wine-making skills. Domaine Salvat is split between land at Villeneuve, overlooking the river Tet, inland from Perpignan, and vineyards at Saint-Paul de Fenouillet in the upper Agly Valley. Family owned for over a century, the area was created in 1860 by the purchase of land by Auguste Salvat on the territory of Taïhac. Today the Villeneuve A River vineyard enjoys a hot, dry climate that is typically Mediterranean. The vines are rooted in a stony, clay-siliceous limestone terraces averages. At Saint Martin de Fenouillet, geology is more upset with clay and limestone soils in the upper part, followed by granitic sand on the bottom. The climate is cooler than the Villeneuve River area. Cleanly made wines with fresh taste is what Savat is recognized for.
