VINIFICATION:
Grape Harvest Date: From 10 to 28 October 2003
The grapes are picked by hand in 14kg boxes, and once in the winery, the most healthy and optimally matured clusters are manually selected. They are destemed, lightly pressed and gravity carried (without pump) to the different fermentatition tanks. The grape juice of each variety, ferments and macerates itself apart from its lees at a controlled temperature of 28-29º C, using for this process bourdeux barrels of 225 lt of different origin and toast degree. During this process 3 “pigeages” are daily made in order to extract the “sweet” tanins from the grapes along with their flavor and colour potential. Later on, the malolactic fermentation is done in order to increase “mouth thickness” and stabilize the wine microbiologically. The aging period is 14 months for black Grenache and Cariñena, and 20 months for the rest of varieties.
ADDITIONAL INFORMATION:
The Clos Englora AV14 is not submitted to any finning treatment, neither stabilization nor filtration. 86% of the barrels used in the aging process come from the Allier, Tronçais and Centre French forests and the remaining 14% from the American Oaks of Tenesse area. The toast degrees are 92% medium, 5% medium plus and the remaining 3% high toast. The barrels age is 0 and 1 year. The grapes for this elaboration come from aged vineyards: 70 years old Grenache, 50 years old Carignen and about 25 years old the remaining varieties. The yield per hectare is very low: 0.5 kg per plant in Grenache and Carignen 1.5 – 2 kg in the rest of varieties. Regarding the culture works, very strict winter and spring prunnings have been conducted along with a 30% clusters´s clear up during summer season to increase the grapes quality.
